Hu tieu satay, My Tho’s specialty noodle

My Tho city in the southern province of Tien Giang has two distinct types of noodle: hu tieu My Tho and hu tieu satay (hu tieu sa te). The latter has a texture and colour similar to beef stew, topped with tenderloin beef cuts instead of pork organs in the original hu tieu version. The dish is garnished with green starfruit, tomato and cucumber slices, bean sprouts, cilantro and roasted peanuts. The satay soup has all the intense flavours: salty, sweet, sour with added sauté heat and a buttery layer of flavour. Visiting My Tho city, one looking to try the famous local dish should find a shop named Sa Te Trung Trac at 108 Phan Van Khoe street in Dao Thanh commune, which has stood the test of time with 30 years in business.
